Chef Joe Trama finalist in Pasta Labella Recipe Challenge

Joseph Trama, Executive Chef, The Center for the Visual and Performing Arts, Munster, has been selected to prepare an original recipe in the Pasta Labella Recipe Challenge to be held July 18th during the American Culinary Federation's annual convention in Orlando, Florida.

Of the 41 entries for the Pasta Labella Recipe Challenge which came from all across the country, only 4 were chosen as finalists. According to the official rules, each recipe must include a pasta from Labella's new Carb19 line, and a protein. Chef Trama will prepare Carb19 Penne, roasted red pepper tomato sauce, with herb stuffed asiago pork tenderloin.

60 minutes will be allotted to prepare 8 portions of the entrée, with an additional 10 minutes allocated for dish-up and judging. Each chef must supply all recipe ingredients as well as serving plates for presentation purposes. Judging will focus on the following: creativity and originality; flavor, taste, texture, nutritional balance and ingredient compatibility; visual presentation; and practical use of preparation skills and culinary fundamentals.

Joseph J. Trama, Certified Executive Chef, American Culinary Federation, has been at The Center for Visual and Performing Arts since 1989. He hosted the December 2002, ACF Chicago Chefs of Cuisine. He earned bronze medals in the Sandcreek Country Club Ice Centerpiece contest and the McCormick Place Poultry category. He participates in the annual Celebrity Chefs fund raiser for Meals on Wheels. The Center's Sunday brunch has been voted #1 Brunch by the readers of both the Times and the Post-Tribune for the past six years.
